Whether you are trying to manage your weight, your sodium intake, or your insulin levels, there are a variety of healthy recipes you can enjoy. One of the best choices for a pre-workout lunch is a barley and black bean salad. The base for this delicious dish is one cup of uncooked barley, one can of black beans, a pint of cherry tomatoes, half a cup of chopped bell pepper, and half a cup of cubed Monterey Jack cheese. Cook and drain the barley, then halve the tomatoes and add them to the dish. Toss in the pepper and the cheese, then add 1/3 cup lemon juice and two tablespoons of olive oil; mix thoroughly for a tasty and filling lunchtime delight.
